In case you didn't know, Passover is one of the most important of all Jewish holidays.  Why?  This Jewish holy day honors the Exodus of the Israelites from Egypt after they were freed from slavery.  Hooray!  The Old Testament says that God was to exact a tenth plague upon the land by killing everyone's first born sons, but GOD told the Jewish people that in order to save their first born son they needed to place the blood from their animal (lamb) sacrifice over their doors (that's the reason for the shank bone on the Seder Plate)....this would let the Angel of Death know to "PASS OVER" those doors w/the blood on them. 

When the Hebrews fled, it was in such haste that their daily bread did not have time to rise and therefore unleavened bread is eaten during the festival (ahhh ha - Matzah!).  The highlight of the celebration is the Seder ceremony, which is performed on the first two nights of Passover.  It is celebrated each year on the 15^th day of the Hebrew month of Nisan.  Passover for 2011 will be held from the 19^th of April, will last seven days and no work may be done on these days according to the tradition.  (Did anyone tell the boss?)
